The Falmouth Hotel is one of Cornwall’s best located hotels situated opposite Castle Beach with a spectacular view over the Falmouth Bay! The hotel consists of over 71 bedrooms forming different individual styles and views, along with our Castle View Restaurant & Bar, 1865 Lounge, Leisure & Spa Facilities with indoor swimming pool along various events spaces which accommodates meetings, weddings and events in excess of 500 to include our Falmouth Garden.

The hotel is now part of The Cornwall Hotel Collection, a collection that stands at the heart of Cornish hospitality. Comprised of three hotels – The Alverton’s historic hillside hideaway, The Greenbank’s enchanting waterfront setting, and The Falmouth’s iconic Victorian landmark – excellence lies at the heart of all that we do.

As part of our recruitment plans we are now looking to recruit an Assistant Food & Beverage Manager on a full time basis working to the needs of the business. This is a fantastic opportunity for an individual to join the hotel in what is a very exciting time for the business currently under a renovation program following takeover in 2024.

The position generally 5 days over 7 involves late nights and weekends and also due to the nature of the business will be required to work during peak seasonal holidays.

About the Role:

As the Assistant Food & Beverage Manager you will assist the Food & Beverage Manager and oversee the entire Food & Beverage operation including the Restaurant, Bars & Event departments, taking responsibility for ensuring high 4 star standards of service are consistently delivered.
Managing, supporting and guiding our vibrant and diverse team to ensure they create magical memories for all of our guests, every time, our guest journey is at the heart of what we do!
You are the ultimate hospitality professional able to make each and every guest feel special and have the ability to encourage, and motivate team members to do the same, by leading from the top.
Having outstanding knowledge of all things food and drink related will inspire those working with you, and you will enjoy sharing your knowledge through regular training and development with the team. Development and coaching is a key aspect within the role in this time of business transition.
Making clear, confident decisions, will be second nature to you, consulting with others where needed ensuring you all reach the same goals.
Being able to demonstrate a strong understanding of business financials including labour costs, forecasting and budgets.
Being a Assistant Food & Beverage Manager requires a lot of skill and dedication, so you will have incredible organisational skills and attention to detail, along with stamina and the ability to remain calm under pressure.

About you:
*Previous Food & Beverage management experience within a multi outlet 4 star luxury Hotel is required for this role.

Experienced in effectively managing large scale events and weddings.
Having excellent knowledge of wine and food, where you are confident to offer wine pairings and lead ongoing training on this to the team.
Proven experience of managing, coaching and developing teams, and you will enjoy motivating others to be their best, achieve their goals and full potential. Being driven to deliver outstanding and memorable customer service will be your passion and motivation.
You will be excellent at building a rapport with departments, colleagues and guests.
Most of all, you will have a professional, organised and friendly approach and be able to anticipate our guests needs and create memories and improve the guest journey and reputation.
Additional Role Requirements:

· Improving operating standards in all F&B departments, ensuring consistently high standards of service and maximum guest satisfaction throughout.

· Ensuring that standards are regularly reviewed and that SOP Manuals are updated, all staff are trained accordingly and full training records are maintained.

· Controlling departmental expenses with a full understanding of liquor stock-take controls and achieving budgeted GP targets including payroll, in line with business levels.

· Implementing and monitoring departmental training & development plans

· Constantly reviewing on-trend products and competitors to be ahead of the market and full implementation on property

· Being responsible for all health and safety issues within the F&B department and departmental training.

· Duty Management shifts as required by the business.

· An extensive knowledge of wines, spirits, barista experience & a passion for fresh, quality food.

· Strong financial awareness with a full understanding of food and beverage revenue streams and controls, including PMS and POS systems.

· Self-motivation and drive to be able to motivate others to achieve.

· Proven man-management, coaching and team building skills

· A good understanding of all applicable Health & Safety legislation and ideally have Food Safety Level 2/3 qualification.

· Good presentation with an outgoing personality, excellent interpersonal skills, a professional manner and excellent command of written & spoken English

· Manage, motivate and develop all restaurant and bar staff to achieve highest levels of service excellence as well as highly positive staff relations.

· Floor presence during service to serve guests efficiently and consistently as well as monitoring all staff.

· Evaluate guest satisfaction levels with a focus on continuous improvement via NPS feedback.

· Ensure communication meetings are conducted and post-meeting minutes generated

· Assist other departments wherever necessary and maintain good working relationships.

· Comply with hotel security, fire regulations and all health and safety legislation
