Role Summary:
The Commis Chef is responsible for the correct preparation and production of all foodstuffs, adhering to recipe cards, production procedures, and proper hygiene practices under the guidance of senior kitchen staff. They ensure high standards of food hygiene and safety while following kitchen standards and procedures.
Reporting to the Sous Chef and Chef De Partie, the Commis Chef contributes to delivering food to the standards required by the establishment.
Roles & Responsibilities:
· Manage day-to-day operations of assigned section.
· Ensure consistency in food quality and presentation.
· Attend briefings for special functions as needed.
· Maintain cleanliness, stock control, organization, and standards of the section.
· Assist with daily ordering considering stock usage, menu planning, and business levels.
· Demonstrate leadership by taking control of tasks and fostering team spirit.
· Keep recipe folders updated and organized.
· Minimize food waste and over-production of mis-en-place.
· Contribute to reducing consumption of resources like gas, electricity, and water.
· Foster good staff communication and relations.
· Undertake any other duty consistent with the role.
Education and Experience:
· Culinary Studies or relevant field.
· Minimum of 1 year of experience in a similar role.
Physical Requirements:
· Ability to stand or sit for prolonged periods.
· Work through warm/cold environments.
· Ability to bend at the knee or waist.
· Lift up to 12+kg.
