Job Description Job Responsibilities
• Conduct regular reviews of kitchen operations. Conduct random checks on cooked/semi cooked food for adherence to recipes, hygiene regulations and condition of equipment. Check that food adulteration prevention and health laws as stipulated are followed.
• Interact with guests, seek feedback,Promote new products and special events
• Receive requirements from outlet chefs on equipment needed, review availability and create capex plan. Review requirement vs. budget for operating supplies and send recommended purchase list to chef and seek approval. Coordinate with purchase function for selection of vendors based on pricing and quality elements.
• Provide F&B with SOPs for the restaurant. Guide and assist the staff to ensure all guidelines are followed in terms of attractive presentation of dishes and consistency guidelines.
• Analyse food cost reports, yield reports, microbiological reports etc., identify issues and take corrective action where needed. Report results to supervisors.
• Prepare for audits and conduct them internally to ensure high quality and adherence to compliance. Resolve queries raised by auditors and formulate corrective action as per audit reports.
• Assist HR in identifying candidates, induct them into their new roles and appraise their performance. Train staff on operational requirements, coordinate their roster, leaves and transfers.
• Liaise with the health department, government bodies and media for the smooth operations of the unit and to generate mileage on events in the hotel.
• Train the staff on SOPs and ensure they are complied with. Prepare for audits and execute all corrective measures outlined by supervisor.
• Review roster and grooming of staff. Keep track of contract staff for processing for salaries and canteen consumption.
• In addition to the above mentioned duties and job functions, any other assignment given by the management within the scope of job.
